Caffe Grano - Colombia La Primavera Decaf Espresso - 250g

Tucan Decaf is characterized by small, round beans. The coffee is grown by local, small-scale growers, mostly of indigenous origin. To determine the optimal decaffeination conditions, the physicochemical parameters of the harvest are analyzed before the process begins. The process itself takes place in a vacuum under controlled flow, temperature, and pressure conditions. The first phase involves steeping the beans in hot water. During this "bath," the green beans release caffeine and other soluble components, such as essential oils. Next, the water, saturated with caffeine and other compounds, undergoes filtration. It passes through a carbon filter, which binds caffeine molecules, leaving the substances responsible for flavor in the water. This decaffeinated water is called GCE (Green Coffee Extract). This is used in recirculation, where subsequent batches of raw material are steeped again. Since it's already saturated with flavoring substances, subsequent cycles primarily remove caffeine, without affecting the flavor. Next, the beans are dried three times to optimal moisture levels and polished.
