DAK Coffee Roasters – Ethiopia Surf Jam is the second summer release from the Amsterdam-based roastery, offering a dense and sweet counterpart to their washed selections. Grown at an altitude of 2100 MASL near the Chelchele station, this lot features traditional Heirloom varieties. Processed using the traditional dry method (Natural), the intact cherries undergo careful sun-drying, which locks in an abundance of fruit sugars and yields a cup with high structural sweetness and a rich, jammy mouthfeel.

The resulting cup delivers excellent flavor depth, a heavy body, and concentrated fruit characteristics. The tasting profile opens with a prominent note of ripe blackberry paired with the dense sweetness of cooked cherry jam. This rich fruit core is masterfully grounded by a comforting, sweet layer of dried dates on the finish. Lightly roasted for filter extraction, this lot yields fantastic definition and balance across manual pour-overs like the Hario V60.
