Most coffee is grown in Yunnan, a region in southwest China rich in ethnic minorities. It is also grown in Hainan and Fujian, but this 5% of total production is typically low-quality Robusta.
Rubber trees, pineapples, and jackfruit provide shade. Xin Zhao produces coffee on the "Happenstance" estate, selected and used in the World Barista Championships. This perfectly illustrates the potential of Chinese coffee on the international stage. Ripe coffee cherries are sealed in a fermentation bag for 72 hours (28°C). Dried to 30% moisture, they are returned to the fermentation bag for another 120 hours and then sun-dried.
