KB Coffee Roasters – Colombia Nogales Crimson is a highly innovative specialty coffee that showcases the elegant Java variety through biochemical precision. Produced by Oscar Hernandez at Finca Los Nogales, this lot underwent a meticulous Mosto Washed fermentation process. Following density sorting, the whole cherries were flash-pasteurized at 80°C for 20 seconds to unlock fermentable sugars. After pulping, the seeds were fermented for 5 days in sealed barrels with the addition of mosto—the nutrient-rich juice pressed directly from the coffee cherry skins of the same harvest.
The resulting cup features immaculate transparency, a juicy mouthfeel, and a complex acidic structure. It leads with a prominent, sweet sweetness of ripe peaches beautifully intertwined with a fragrant bouquet of fresh jasmine. A vibrant, exotic layer of juicy pineapple drives the mid-palate, while a crisp, refreshing finish of tangy lime (citron vert) rounds out the profile. Lightly roasted for filter extraction, this coffee delivers pristine flavor definition through manual pour-over equipment like the Hario V60.
