Nero Scuro - China, Aulai, Co-Fermented - 200g
A unique, experimental coffee from the Chinese province of Yunnan, processed at the Aulai Washing Station. This batch is the result of pioneering co-fermentation with juniper berries, conducted in a controlled, anaerobic environment. Thanks to precise monitoring of pH and Brix levels, fermentation lasts longer, allowing for deep extraction of aromas and the permeation of characteristic notes.
The flavor is dominated by the sweetness of black grapes and a juicy expression of tropical fruits. Juniper gives the coffee a distinct, "gin" character—subtle, vegetal accents of rosemary and juniper berries emerge, introducing freshness and a distinctive, unique twist. The profile is clean, yet intense and multi-layered, ideal for those seeking fermented coffees with a distinct, innovative character.
