Ignacio Rodriguez's Pink Bourbon has undergone CO2 fermentation, yielding complex notes of grape, dark chocolate, and orange peel—an intense coffee.

This "Embrujo" (spell) batch embodies La Palmera's commitment to exceptional quality and sustainability. As one of the few large farms in a region dominated by smallholders, La Palmera provides stable, year-round employment. Workers receive housing, meals, and high wages, and 48 women—many single mothers—handle important quality control duties. Ignacio also practices sustainable agriculture, using coffee pulp as fertilizer, striving to reduce chemical use by up to 25%, although generating sufficient organic compost remains a challenge.
