This microlot from Finca San Francisco in the Apaneca-Ilamatepec region is the result of the work of the renowned Salaverría family, who have specialized in producing coffees from the volcanic regions of El Salvador for five generations. This Ethiopian Heirloom lot underwent over 300 hours of anaerobic natural fermentation in sealed tanks, resulting in depth, structure, and an exceptionally intense profile.

Intense notes of ripe cherry dominate the cup, clearly supported by a floral accent of rose. The whole is complemented by the velvety sweetness of raisins and the deep, dessert character of bitter chocolate. The long, controlled fermentation process makes the coffee concentrated, aromatic, and multi-dimensional—naturally sweet, juicy, and elegant at the same time.
