DAK Coffee - Kenya, Raspberry Pop - 250g
We love this season in Kenya, especially this year; the coffees are vibrant and full of typical Kenyan aromas. This AA from Mugaga Farmers Cooperative Society is juicy, dense, and flavorful with notes of raspberry, jasmine, and black tea.
Process: The coffees are sorted by density into three grades by a mashing machine. Grades 1 and 2 are fermented separately. Grade 3 is considered a low grade.
Fermentation: The coffees are dry-fermented for 18-36 hours in concrete tanks under a roof that provides shade to better control the temperature during fermentation. After fermentation, the coffees are washed and sorted again by density in washing channels. Sometimes they are soaked in clean water overnight. They are sun-dried for 12 to 20 days on African drying beds. The time depends on weather conditions. Coffees are covered with foil at noon and at night.
