Dak Coffee Roasters – Colombia Bonita is a highly technical specialty coffee sourced from Finca El Proceso in Colombia. Producer Jorge Rojas combined the prestigious Geisha variety with a meticulous two-step Honey process. The lot underwent 48 hours of anaerobic fermentation in sealed buckets to control the pH drop before a light rinse. Jorge applied a unique interrupted drying technique in the marquesina, boosting fruit clarity and quality.
The resulting cup is bright, well-structured, and delicate. The flavor profile features crisp notes of honeydew melon and exotic lychee. A floral layer of elderflower defines the aroma, while a sweet touch of nectarine rounds out the finish. Lightly roasted for filter brewing, this coffee delivers high transparency and flavor separation through manual pour-over methods like the Hario V60 or Chemex.
