Dak Coffee Roasters – Colombia Purple Clouds is one of the exclusive first lots from the new coffee estate of Dak's partners at Cata Export. Produced in very limited quantities, these Pink Bourbon beans thrive at an altitude of 2000m. The processing is meticulous: hand-picked cherries are oxidized in open tanks for 72–84 hours, followed by a 36-hour anaerobic fermentation. The journey concludes with 15–20 days of sun-drying, depending on the Andean weather.
The result is a remarkably creamy and fruit-forward cup that truly lives up to its name. Purple Clouds reminds us of forest fruit gelato paired with the smooth, tangy sweetness of vanilla yogurt. The profile is anchored by a rich brown sugar finish. It’s a sophisticated, dessert-like experience that showcases the incredible potential of high-altitude Colombian Pink Bourbon.
