Friedhats – Panama Kotowa Chakira is a single-origin specialty coffee sourced from the Chiriquí region in Panama. Cultivated on the Duncan farm by the Koyner family (Kotowa) at an elevation of 1650–1750 MASL, this second-harvest lot consists of the rare Ethiopian-derived variety Chakira. The cherries undergo traditional dry processing (Natural), preserving high sweetness and enhancing the variety's distinct aromatic complexity.
The resulting cup features a balanced, fruit-forward sensory profile with structured acidity. The primary flavor hierarchy presents tart notes of ripe kiwi and bright grapefruit, grounded by a rich base of sweet chocolate. Roasted as an Omni-roast, this lot is formulated to perform consistently across all extraction methods, from manual pour-overs (Hario V60, Chemex) to espresso machines.
