KB Coffee Roasters - Colombia El Diviso Papayo - 250g
Nestor and his brother Adrian took over the family farm and decided to expand into specialty coffee production. The two brothers teamed up with Johan Vergara to create the "El Diviso" farm in Colombia’s Huila region. This young trio is already making waves on the specialty coffee scene.
Yellow Papayo variety – bursting with fruity notes. A true rarity!
Processing method:
● Step 1. The natural Chiroso Caturra process begins with harvesting cherries at peak ripeness – reaching between 24 and 26 degrees Brix. The coffee is placed into plastic tanks where an oxidation process takes place (48 hours). During this stage, runoff is collected and recirculated throughout the cycle, with continuous monitoring of Brix levels and pH (4.5).
● Step 2. To initiate anaerobic fermentation, the cherries undergo thermal shock at 50°C and are transferred into airtight plastic containers. During fermentation, Saccharomyces cerevisiae T58 yeast (commonly used in brewing to enhance flavor profiles) is added. The solution is sprayed onto the cherries and left to condition and multiply over an 80-hour period.
● Step 3. After fermentation, the cherries are mechanically dried to remove as much moisture as possible (around 12 hours), then sun-dried for approximately 15 days. Finally, the coffee undergoes both physical and sensory quality assessments.
Flavor profile: blackcurrant, redcurrant, strawberries, cherries.
