KB Coffee Roasters – Colombia El Diviso is a pinnacle of modern specialty coffee processing. Cultivated at 1850 MASL by the renowned Nestor Lasso in Huila, this lot showcases 100% Sudan Rume, an ancient and rare varietal. The coffee undergoes a strict Natural Anaerobic Thermal Shock process involving separate oxidation and anaerobic stages, sealed submerged fermentation with leachate recirculation, and a hot-water thermal shock up to 70°C to freeze microbial activity. The cherries are then mechanically dried below 37°C in a dark, hermetic dehumidifier to prevent any loss of volatile terpenes.

The resulting cup features a heavy, syrupy body paired with intense fruit clarity. It opens with explicit notes of sweet cherry candy and a dense core of juicy red fruits. The profile expands into vibrant layers of assorted tropical fruits, backed by a clean and expressive floral aroma. Lightly roasted for filter extractions, this technical masterpiece yields extraordinary flavor complexity through manual pour-over methods like the Hario V60 or Chemex.
