The profile opens with the juicy sweetness of gummy bears, reminiscent of fruit jellies—soft, sugary, and full of concentrated fruitiness. This is followed by a distinctive passion fruit, imbuing the infusion with tropical freshness and a vibrant, radiant acidity. Blood orange rounds it all out, introducing an elegant citrus accent with a touch of bitterness and a generous amount of sweetness. The coffee is intense, luminous, and balanced, with a long, fruity finish characteristic of papaya and mosto fermentation. Colombia Pasiflora comes from the La Reserva farm in Pitalito (Huila), run by Marlon Rojas Pérez, a third-generation producer and Colombian Cup Tasting Champion (2024). Bourbon Papayo, grown at an altitude of 1,720 meters above sea level, has undergone a unique washed/co-fermented process, combining double fermentation with the addition of mosto and passion fruit (passion fruit, gulupa). This is a wine of immense precision, modern character, and pure, intensely fruity expression.
