LOT Coffee - Ethiopia Bona Zuria, Anaerobic - 250g
The Bona Zuria area is located in the Sidamo region of Ethiopia. It borders the Oromia region to the south, Hula District to the west, Bursa to the northwest, Arbegona to the north, and Bensa to the east. This coffee comes from 600 smallholder farmers in the Bona Zuria region. These farmers own and manage plots of land ranging from 3 to 8 hectares. The coffee cherries are hand-picked and then transported by horse or donkey to the Ayele Tulu processing station. This station is located at an altitude of 2,190 meters above sea level, making it one of the highest processing stations in Ethiopia. It was officially founded in 2014 by Mr. Ayele Tulu, who has worked in the coffee industry for over two decades.
Processing Process:
Anaerobic Process: Upon arrival, processing plant staff perform an initial visual inspection. Only perfectly ripe cherries are selected for anaerobic fermentation. They are then placed in fermentation barrels, from which oxygen is removed and regulated via a valve connected to the barrels. During fermentation, which lasts 9 to 48 hours, sugar and pH levels are constantly monitored. After fermentation, the cherries are dried on raised beds in direct sunlight. The entire drying process takes approximately 4 to 6 weeks.
