Colombia Bubble Gum is an absolutely unique, experimental Caturra from the Risaralda region. Discover intense, unusual notes of watermelon and cantaloupe, achieved through innovative nitrofermentation with the addition of fruit musts and yeast cultures. This coffee will transport you to a world of impossible flavors! Nitrofermentation Process (Bubble Gum): Farmer Julio Andres Quiceno is a master of experimentation. Caturra beans were subjected to a strictly controlled fermentation in a bioreactor, where oxygen was replaced with nitrogen. Specially prepared pineapple, sugarcane, and watermelon must, along with selected microorganisms (Saccharomyces, Kazachstania humilis), were used for the process. Constant monitoring of temperature, pH, and Brix levels gave the coffee its unique, almost "bubblegum-like" and juicy sweetness, reminiscent of watermelon and melon. Long drying (25 days in the sun and 5 days mechanically) perfectly preserved this incredible profile.
