Olivo Coffee - Kolumbia May Pop - 200g

Colombia May Pop is an explosion of tropical passion! This blend of Caturra and Castillo from Risaralda has been innovatively co-fermented with passion fruit, creating an incredibly intense and juicy flavor profile. Expect pronounced notes of passion fruit and lychee in the cup. A true fruit bomb. This coffee has an intense, almost syrupy sweetness and a very high, yet beautifully integrated acidity. Co-fermentation Process (Culturing - Maypop): Julio Andres Quiceno utilized the "Culturing" method, or co-fermentation with fruit. Coffee cherries fermented in controlled conditions, with limited access to oxygen, for over 140 hours, accompanied by two varieties of passion fruit: passion fruit (Maracuja) and curuba. The addition of yeast and bacterial cultures (Saccharomyces, Kazachstania humilis) enhanced metabolic processes that permanently imbued the exotic, sweet-sour passion fruit profile and delicate lychee notes into the beans. Long, slow drying in the sun and mechanically preserved this complex and intense flavor.
