Composed of 100% Red Bourbon cherries grown at high elevations, this lot undergoes traditional fully Washed processing. This technical method preserves high cup clarity, vibrant acidity, and an elegant expression of the local terroir.

The resulting filter roast demonstrates a lively, structured taste profile. The flavor hierarchy opens with bright notes of orange and sweet citrus marmalade, anchored by a smooth, rich base of palm sugar. Lightly roasted for manual pour-over extractions, it performs consistently across tools like the Hario V60, Chemex, and AeroPress.
