An experimental Mandela variety from the iconic Granja La Esperanza farm. Deep, liqueur-like, tropical – a complex and creamy coffee after the Natural XO process.
The flavor reveals intense notes of cherry liqueur, pineapple, and passion fruit, with a creamy body and a clean, ripe acidity in the finish. This coffee is a blend of intensity, complexity, and velvety sweetness. After measuring the natural sugar content, the fruit is carefully fermented in GrainPro bags for 70 hours. By gently turning every 5 hours, each fruit absorbs its aromatic essence, enhancing the natural acidity and fruity notes. The fruit then undergoes a 3-day mechanical drying process at a controlled temperature of 38-40°C. It then matures naturally on raised beds for 12-15 days, developing a rich and complex flavor.
