Friedhats - Ethiopia Chelchele Pineapple Anaerobic Natural - 250g

Friedhats – Ethiopia Chelchele Pineapple is an experimental single-origin specialty coffee from the Gedeb region of Ethiopia. Grown at altitudes of 1900–2300 MASL by EDN and processed at the Banko Chelchele washing station, this lot consists of the 74112 and 74110 varieties. The coffee was processed using an Anaerobic Natural + Pineapple co-fermentation. The introduction of bromelain, a natural enzyme present in pineapple pulp and stems, accelerates the breakdown of mucosal proteins, enhancing cell-wall permeability and organic sugar absorption during fermentation.

The resulting cup features high clarity, prominent sweetness, and a complex fermented fruit profile. The flavor hierarchy is led by vibrant notes of fermented pineapple tepache, paired with the mild acidity of sweet Meyer lemon. The finish is defined by a clean, sweet note resembling Lipton™ raspberry iced tea. Lightly roasted for filter extraction, this lot is designed for manual pour-overs including the Hario V60, Chemex, and AeroPress.
