This coffee is a washed Castillo and Columbia coffee. In the cup, expect a vanilla sweetness balanced by the acidity of lemon zest.
Coffee harvesting is a painstaking process; the arduous work of sorting through thousands and thousands of cherries to pick only the ripest, from tree to tree, until the end of a long day. Employment time depends on the farmer's readiness to begin harvesting. The informality and instability of this work creates an environment where formal employment and employment are a formidable task. That's why Manos al Grano joined forces with Azahar to create the Pickers Project. This team of 35 pickers and 20 farms (so far) have joined forces to create a mutually beneficial system. This gives farmers access to dedicated and skilled workers who work full-time with fair wages, benefits, and compliance with labor laws—a feat that was nearly impossible due to the transient and informal nature of precarious part-time work.
