Los Nogales Virtuoso is a cup full of bright, fruity tones. Peach, apricot, and pineapple dominate, creating a sweet-juicy composition with high clarity and purity. Floral accents appear in the background, lending lightness and elegance. The bean is incredibly creamy, pure, and perfectly balanced between sweetness and freshness—ideal for lovers of fruity Colombians with complex fermentation.
Oscar Hernandez, producer of Los Nogales, is a third-generation coffee farmer who cultivates coffee in the southern part of the Huila department, near the city of Brussels. He is an energetic, always positive, and innovative person, not only for his family but also for the entire community. His father, Ricaurte Hernandez, was the first to prove what we know today: the best coffee in all of Colombia comes from Brussels. In 2006, he won the Cup of Excellence.
About the Processing:
Thermal Shock: Selected beans are thermally shocked in water at 80°C (166°F) for 60 seconds, followed by rapid cooling in cold water at 15°C (59°F) for 3 minutes. This process breaks down the sugars and pasteurizes the beans, contributing to the final coffee flavor. – The skins are removed and mosto (juice extracted from the skins of the coffee cherries, which contains a high amount of natural sugars) is added.
Fermentation: The coffee beans undergo a 120-hour fermentation process. During this time, the sugars are broken down, affecting the flavor and acidity of the coffee. Prefermenting agents, similar to leavening, are also added, giving the coffee its unique characteristics. – Sun-Drying: Finally, the fermented coffee beans are sun-dried for 15 days. This step is necessary to reduce the beans' moisture content to a level suitable for long-term storage and to develop the coffee's flavor.
