Colombia Gaitania is an intense, deep, and highly complex coffee from the Tolima region, one of Colombia's top terroirs. Thanks to its anaerobic natural processing, it offers a profile reminiscent of fruit wine and jam – elegant, rich, and exceptionally aromatic. This coffee is for those who enjoy bold, fermented notes, but in a very clean, controlled style. The cup is dominated by red wine, ripe cherry, and orange jam. The overall flavor is round, juicy, and smooth, with low to medium acidity and a long, vinous-fruity finish. This coffee is the result of a collaboration with one of Colombia's most important cooperatives, led by the award-winning Jorge Elías Rojas. The coffee is dried for three weeks on raised beds, with rigorous quality control. Furthermore, Tres Rayas operates entirely organically.
