Nolens Volens Roastery - Colombia La Dinastia Wilder Lazo is an ultra-limited release from the COMPETITION! line, from one of Colombia's most recognizable producers. The Caturra Chiroso variety, processed in an extreme natural process with 168-hour whole-fruit fermentation, produces a wild, complex, and absolutely unique cup.
The aroma opens with a distinct bergamot reminiscent of Earl Grey tea, followed by an intense resin – forest-like, fresh, almost like tree sap. The palate is complemented by tropical citrus: lime, yuzu, and ripe mandarin. The overall flavor is very sweet, herbal, and floral, with incredible purity despite the extremely long fermentation. The finish is long, juicy, and slightly balsamic.
This is a truly "competition-style" coffee – unusual, bold, yet perfectly controlled.
