Good Coffee - Kolumbia Javier Sanchez - 250g

This exceptional Colombian Geisha, from the Montañitas farm in the Inzá region of Cauca, run by Javier Sánchez, was cultivated at an altitude of 1,980–2,000 meters above sea level and carefully processed. It impressed the jury at the Subasta por la Paz auction, winning second place.

This coffee is a veritable feast of flavors, dominated by citrus fruits—crisp tangerine and sweet pomelo, framed by notes of tropical mango. Wild strawberries and strawberries appear in the background, and the whole thing is set on a velvety, chocolate-caramel base. The Geisha variety, grown in the shade of elm and avocado trees, and the meticulous honey processing (fermentation in bags for 35 hours, followed by 8 days of drying) give the coffee an extraordinary sweetness, complexity, and elegance. This is one of those cups that reveals ever-new layers of aroma.
