Wilton Benítez, a chemical engineer and biotechnology enthusiast, has been developing processing methods that elevate Colombian coffee to a whole new level for years. Macondo is the result of careful fruit selection, two phases of anaerobic fermentation, and a thermal shock process that enhances the coffee's natural aromas.
