Pikola - Colombia Sebastian Ramirez, decaf - 250g

Finca El Placer , owned by Sebastián Ramírez's family for four generations, is a unique story of passion for coffee. Sebastián, who has been running the farm for over a decade, focuses on the precise processing of coffee using different methods - dry, washed and semi-washed. Each variety also undergoes carbonic maceration, which contributes to the refined taste of the resulting drink. The processing process of this decaf coffee is thought out in the smallest details to ensure the highest quality and freshness. It all starts with the careful picking and sorting of the coffee cherries, choosing 90% ripe and 10% semi-ripe. They are crushed the same day, which allows them to maintain their maximum freshness. Fermentation traditionally takes place in vats for 24 to 36 hours. The coffee is then washed three times to remove all impurities, and the resulting beans retain their purity and character. Then comes a phase of slow and carefully controlled drying on sheets, which lasts about 15 days.
