People Possession – Pink is a single-origin specialty coffee from the Huila region in Colombia. Produced by Franky Hoyos at an altitude of 1600 MASL, this lot features the rare Bourbon Aji variety. The coffee undergoes a Mosto Anaerobic Natural process, which combines anaerobic fermentation with added coffee pulp juices (mosto) followed by natural sun-drying. This method intensifies natural sugars and yields a distinct, dessert-like flavor profile.

The resulting cup is characterized by high sweetness, low bitterness, and a rich, creamy texture. The primary flavor notes bring forward explicit tones of sweet bubble gum and rich strawberry shortcake. The finish reveals a smooth, velvety undertone of banana milkshake. Lightly roasted for filter extraction, this lot performs with high consistency across manual brewing tools including the Hario V60, Chemex, and AeroPress.
