It took several years for the Doubleshot roastery to find a decaffeinated coffee that tasted good enough compared to their standard single-origin offerings. The use of ethyl acetate extracted from sugarcane in the decaffeination process is a completely new development, having only arrived in Europe last year. What's so interesting about it? In fact, it's the only process that positively impacts the final flavors.
