KB Coffee Roasters – Colombia Aroma Nativo RY 1120 EFM is a single-origin specialty coffee sourced from Acevedo, Huila, Colombia. Cultivated at 1700–1750 MASL, this lot features the rare Bourbon Rayé (Striped Bourbon) mutation, processed by Luis Marcelino of Aroma Nativo under the Veci Project initiative. The beans undergo a Honey Double Fermentation process: controlled anaerobic fermentation in whole cherry, followed by pulping and secondary barrel fermentation with mucilage using specific yeast strains and native bacteria. The coffee is sun-dried for 10 days on raised beds and aged for 2 months under controlled conditions for flavor stabilization.
The resulting cup demonstrates exceptional clarity, vibrant acidity, and an extraordinarily long finish. The flavor structure is defined by layered fruit notes of blueberries, peach, apricot, and tropical guava, supported by bright citrus tones and delicate floral aromas. Lightly roasted for filter extraction, this lot is optimized for manual pour-over brewing methods including the Hario V60, Chemex, and AeroPress.
