KB Coffee Roasters - Colombia Zarza Ají is a distinctive and modern coffee from the Brussels (Huila) region, produced by Jhonatan Gasca as part of the Zarza Coffee family project. The Bourbon Ají variety, grown at an altitude of 1750–1800 meters above sea level, has undergone a complex natural anaerobic process with thermal shock, which maximizes the fruity and floral character of this rare variety.
Raspberries and blueberries dominate the cup, juicy, intense, and naturally sweet. Cherry candies quickly emerge, giving the whole a slightly jammy, dessert-like character. Floral notes arrive on the finish, bringing lightness and elegance, balancing the fruity intensity. The profile is very aromatic and clean—modern, yet precisely controlled.
