AMOC Coffee – Colombia Rosado is a brilliant showcase of sustainable innovation from Finca El Jaragual in Amalfi, Antioquia. Produced by Jorge Mira and Jonny Martinez, this Rosado (Pink Bourbon) lot represents a perfect balance between technical intervention and classic Colombian terroir. By utilizing yeast inoculation and thermal shock (hot water washes followed by cold water crashes), the farmers have modulated the fermentation to achieve peak aromatics without any heavy "funk" or boozy notes.
The result is a remarkably juicy and silky cup. It leads with a playful and nostalgic note of bubblegum, smoothly transitioning into a rich, comforting milk chocolate finish. This first harvest from El Jaragual is impressively clean and refined, reflecting meticulous plant husbandry and shade-grown cultivation under plantain trees.
