Concept Coffee – Colombia Java Cloud is a highly sophisticated single-origin specialty coffee displaying the peak of experimental post-harvest processing. Produced by Nestor Lasso at the world-renowned Finca El Diviso, this lot features the exotic and elegant Java cultivar. The coffee underwent a highly technical Natural Carbonic Maceration. Ripe cherries selected at 22–24° Brix were placed inside sealed stainless-steel tanks flushed with carbon dioxide for 48–72 hours, creating a low-oxygen environment that heavily intensifies delicate aromatic precursors.
The resulting cup delivers an immaculate sensory experience reminiscent of a fine perfume. It leads with a highly fragrant floral bouquet defined by intense notes of fresh jasmine. The mid-palate introduces a bright, crisp layer of lemongrass running alongside juicy citrus brightness. This exceptionally vibrant and clean structure is anchored by a sweet, comforting finish of ripe melon. Lightly roasted for filter extraction, this lot showcases outstanding clarity across manual pour-over equipment like the Hario V60.
