Concept Coffee Roasters – Colombia Nogales is an 87.75 SCA single-origin specialty coffee sourced from the Huila region in Colombia (1750–1850 MASL). Grown by Oscar Hernández at Finca Los Nogales, this lot consists of the rare Orange Bourbon mutation. The cherries undergo the proprietary Elixir (Mosto Fermented Washed) process, featuring a flash thermal shock at 80°C, depulping, and a 4-to-5-day temperature-controlled fermentation in their own mucilage before washing and sun-drying on raised beds. This technical approach highlights exceptional clarity and complex aromatics.
The resulting filter roast demonstrates a refined, fruit-forward taste profile balanced by a smooth, creamy body. The sensory hierarchy features bright notes of juicy orange and crisp lemongrass, accompanied by sweet apricot and delicate floral notes. Lightly roasted for manual pour-over extraction, it performs consistently across tools like the Hario V60, Chemex, and AeroPress.
