One of our favorite coffees is back, and it's the one-of-a-kind Macaron, a natural red bourbon from Joan Vergara. This intense coffee is full of strawberry jam, raspberry macaroni, and buttercream.
Kolenja coffee from Jhoan Vergera of Finca El Diviso in Huila, Colombia. El Diviso unites two family farms, El Diviso (Nestor and Adrian Lasso) and Las Flores (Jhoan Vergara), near the town of Pitalito, in the Huila region of Colombia. This collaboration is fantastic because these three young people have combined their expertise to improve quality.
Processing:
Hand-harvested ripe cherries - Fermentation in plastic bags for 40 hours at 16°-18°C - Oxidation for 20 hours - Further anaerobic fermentation in plastic bags for 12-18 hours - Washing with hot water to remove mucilage (thermal shock) - Sun-drying for 16-25 days, depending on the weather.
