In the cup, the coffee is clear, and stone fruit comes to the forefront – juicy, fresh, reminiscent of peach and apricot. Black tea develops further, imparting a slightly tannic, elegant character and bringing order to the whole. The finish is bright and refreshing, with a distinct lemon note that enhances the acidity and adds lightness. The profile is clean, harmonious, and very drinkable – exactly what you'd expect from a great washed Ethiopian. Ethiopia Shele is a classic washed Ethiopian from the Yirgacheffe region, sourced from the Shele washing station, where approximately 1,500 small-scale producers supply their cherries. The coffee grows at a very high altitude – at 2,300–2,350 meters above sea level – and the local varieties known as Heirloom offer everything we love about Ethiopia: purity, elegance, and a distinct, tea-like structure.
