Grown by Eliana Bravo at La Esmeralda in Quindio and processed by the experts at Sigilo, this Typica lot underwent a sophisticated 98-hour anaerobic fermentation. By constantly monitoring pH and reintroducing cooled "mosto" to regulate temperature, the producers achieved a vibrant profile that pushes the boundaries of traditional natural processing. After fermentation, the beans were dried on raised beds for 15 days to ensure maximum stability and flavor clarity.
