Grown by Eliana Bravo at La Esmeralda in Quindio and processed by the experts at Sigilo, this Typica lot underwent a sophisticated 98-hour anaerobic fermentation. By constantly monitoring pH and reintroducing cooled "mosto" to regulate temperature, the producers achieved a vibrant profile that pushes the boundaries of traditional natural processing. After fermentation, the beans were dried on raised beds for 15 days to ensure maximum stability and flavor clarity.

The flavor profile is remarkably juicy and bold. It opens with an explosion of tropical fruit notes, followed by the rich, jammy sweetness of black cherry.
