Decaffeinated Coffee About the decaffeination method: Sugarcane – one of the most gentle decaffeination methods, both fast, eco-friendly, and perfectly preserving the coffee's flavor. First, the beans are moistened to increase their volume and susceptibility to the dissolving agent. Then, the beans are washed with ethyl acetate – a natural solvent found in fruits and vegetables. It is also obtained from sugarcane, hence the name of the method. The ethyl acetate combines with the chlorogenic acids in the caffeine, leaching it from the beans. The beans are then dried to their original moisture content. This method is considered one of the gentlest, most eco-friendly, and best at preserving flavor.
