Kavoholik – Colombia Las Flores presents an encounter with the rare and esteemed Tabi variety from one of the most innovative farms in the Huila region. The Vergara family at Las Flores combined a classic Washed process with a Thermal Shock technique. By rapidly changing the water temperature during processing, the beans "lock in" the most volatile aromas, resulting in a cup of extraordinary clarity and intensity that stands out from standard offerings.
The Tabi variety (meaning "good" in the Guambiano dialect) shines here with pure elegance. Expect a very transparent brew with bright, crisp acidity and a complex aromatic bouquet.
