Kolibri Coffee – Colombia Caldas Decaf is a single-origin decaffeinated specialty coffee sourced from the Caldas region in Colombia (1700 MASL). Produced by regional smallholders via Invercafe, this lot consists of 100% Castillo. The coffee undergoes fully Washed processing followed by a natural sugarcane decaffeination process (EA Sugar Cane Decaf). This method selectively removes caffeine while retaining the coffee's original aromatic integrity, body, and sweetness.

The resulting filter roast demonstrates a balanced, clean taste profile with bright acidity and smooth sweetness. The sensory hierarchy opens with fresh notes of red apple and toasted almonds, grounded by a rich caramel finish. Lightly roasted for manual pour-over extraction, it performs consistently across tools like the Hario V60, Chemex, and AeroPress.
