Kolibri Coffee – Colombia Red Jam is a stunning showcase of experimental processing, crafted by Juan Pablo Vélez at the 70-hectare La Luisa estate in Antioquia. This Red Caturra lot undergoes a complex double Carbonic Maceration in stainless steel tanks under strict CO₂ controlled conditions. The first phase lasts 120 hours with whole cherries, followed by depulping and a second 3-day anaerobic fermentation alongside fresh wild berry juice. The coffee is finished using the Honey drying method.

The resulting cup is remarkably juicy, complex, and true to its name. It opens with an intense explosion of sweet strawberries and wild blueberries, layered over a rich, comforting foundation of natural honey sweetness. Despite the prolonged fermentation, Vélez's precise technique ensures incredible flavor clarity and a beautifully structured body.
