This is a competition-class coffee – subtle, pure, and very refined. Colombia Aji is an exceptionally elegant coffee from the Huila region, representing the new Aji variety sought after by our guests. The profile is delicate, floral, and elegant – often compared to St-Germain (elderflower) liqueur. The cup is dominated by elderflower, lychee, sweet lime, and lavender honey. The texture is rounded, velvety, and enveloping, with low acidity and a long, floral-citrus finish. Nestor Lasso is one of the leading figures in the new wave of Colombian specialty coffee. Together with his brother and Jhoan Vergara, he created the El Diviso project, which regularly appears in barista championships around the world. Perfect for those who enjoy floral, tea-like, delicate, low-acidity coffees, Geisha/Sidra/Aji styles, perfect for V60, Origami, Kalita, and cupping.
