People Possession – Red (Cherry Blossom) is a single-origin specialty coffee sourced from smallholders in Huila, Colombia. Grown at an elevation of 1750 MASL, this lot comprises the Castillo and Colombia cultivars. The cherries undergo an experimental natural co-fermentation process with whole red cherries (Natural Co-Fermented w/ Red Cherry). This processing technique imbues the green coffee with intense fruitiness, high sugar concentration, and distinct aromatic definition.
The resulting cup features a candy-like sweetness and fruit-forward flavor hierarchy. The sensory profile opens with vibrant notes of sweet strawberry laces and juicy cherry, transitioning into a soft, smooth base of vanilla. Lightly roasted for filter extraction, this lot is optimized for manual pour-over methods including the Hario V60, Chemex, and AeroPress.
