Composed of 100% Red Bourbon cherries grown at high elevations, this lot undergoes a controlled 12-hour dry fermentation with specific yeast strains (Natural, Yeast Inoculated). This processing technique stabilizes fermentation in cold mountain temperatures, enhancing fruit intensity and cup clarity.
The resulting filter roast demonstrates a bold, fruit-forward structure with a rich, jammy mouthfeel. The sensory hierarchy features prominent notes of dark blackberries, sweet fruit jam, and structured winey aromatics with a touch of funky complexity. Lightly roasted for manual pour-over methods, it performs consistently across tools like the Hario V60, Chemex, and AeroPress.
