Sourced from the Pitalito region in Huila, Colombia, this single-origin lot consists of a mix of local varieties. The cherries underwent an advanced Anaerobic Natural processing technique. This prolonged anaerobic fermentation in whole cherries pushes natural sugars to their limits, yielding a high-intensity flavor profile that challenges traditional coffee boundaries.
The resulting cup features a dense, heavy body with a striking, sugary structure. It opens with an immediate hit of sweet Amarena cherry and almond-like amaretto notes, perfectly mimicking the flavor of Cherry Cola. As the cup cools, a warm wave of spiced vanilla emerges, settling into a deep, lingering finish of ripe plum and licorice. Roasted as an omniroast, this lot performs exceptionally well as a playful, sweet filter brew or as a highly complex, juicy espresso shot.
