Sheep & Raven – Ethiopia Bombe is a highly refined and complex single-origin specialty coffee that perfectly showcases the majesty of the Sidamo region. This premium Grade 1 lot features traditional Heirloom varieties processed via a pristine dry method (Natural) at the famous Bombe washing station. Slow, careful sun-drying of the intact cherries locks an abundance of natural sugars into the seeds, yielding a clean, multi-layered profile with outstanding varietal expression.

The resulting cup delivers an incredibly elegant and beautifully balanced flavor experience. It opens with a prominent, juicy wave of sweet wild blueberry. The mid-palate introduces a sophisticated, highly aromatic layer of premium Earl Grey tea, highlighted by its distinct bergamot clarity. A rich, comforting, and velvety coating finish of liquid honey rounds out the sip completely. Carefully roasted for both filter and espresso applications (Omniroast), this lot shines across manual pour-overs like the Hario V60 as well as vibrant espresso shots.
