element. – Colombia Sinaloa is a single-origin specialty coffee cultivated at the Sinaloa estate in Colombia. This lot consists of the highly regarded Pink Bourbon variety, prized for its high glucose content and natural fruit precursors. The coffee underwent an advanced Strawberry Co-fermentation process. During the anaerobic fermentation phase, fresh strawberries were introduced to the tanks, allowing volatile fruit compounds and organic acids to integrate directly with the green seeds before drying.

The resulting cup delivers high sweetness, clear flavor separation, and a refined body. The flavor profile is led by explicit, intense notes of fresh strawberries, paired with a smooth, creamy base of white chocolate. The clean, light finish is rounded out by delicate notes of white tea. Lightly roasted for filter extraction, this lot is engineered for manual brewing methods including the Hario V60, Chemex, and AeroPress.
