Good Coffee – Brazil Thiago Corsi showcases an incredibly rare and fascinating encounter between an exotic cultivar and Brazil's unique terroir. The highly celebrated Sidra variety, usually associated with complex profiles, was cultivated by Thiago Corsi at the historic Fazenda Rodomunho in the Cerrado Mineiro region. This lot underwent a technical Natural Fermented process. A controlled anaerobic fermentation stage inside the cherry unlocks vibrant flavor precursors while preserving the core qualities of the soil.
The resulting cup delivers a beautifully structured and layered sensory experience. It opens with elegant, deep winey undertones and a bright splash of juicy citrus acidity, both brought forward by the Sidra genetics. The entire profile is anchored by a sweet, comforting, and quintessentially Brazilian finish of toasted hazelnuts. Lightly roasted for filter extraction, this clean, complex lot yields remarkable definition and clean sweetness across manual pour-overs like the Hario V60.
