Kolibri Coffee – Colombia Night Owl is an extraordinary specialty decaf coffee that completely shatters expectations for the decaffeinated segment. Grown at 1930 MASL in Piendamó, Cauca, this single-origin lot showcases 100% Red Bourbon engineered by processing pioneer Wilton Benítez at his famous Granja Paraíso 92 farm. Before decaffeination, the cherries undergo high-intervention processing involving a 90°C hot water thermal shock to boost sweetness, clean depulping, and a strict 36-hour controlled fermentation with selected yeast strains.
The caffeine is carefully removed directly in Colombia using the natural Sugar Cane (Ethyl Acetate) process. Green beans are steamed to expand their pores, then washed in natural ethyl acetate derived from sugar cane, targeting only the caffeine molecules. This preserves all the meticulous, delicate flavor precursors engineered during fermentation. The resulting cup delivers a sophisticated profile highlighting fragrant notes of elderflower, juicy cherry sweetness, and a crisp hint of bergamot. Lightly roasted for filter extraction, Night Owl offers an exquisite experience for manual pour-overs like the Hario V60.
